Orzo, ham, peas and beans combine textures and flavors in an economical soup made in a jiffy. Served with cheddar bread rolls, this Provence herb soup will comfort the whole family.
* Ingredients :
°30 ml (2 tbsp.) Olive oil
°1 chopped onion
°500 ml (2 cups) diced ham
°1.5 L chicken or vegetable broth
°3/4 C (180 ml) orzo
°5 ml (1 teaspoon) of Provence herbs (thyme, rosemary, oregano, savory ...)
°1 cuCp () frozen peas
°1 can white beans 540 ml, rinsed & drained
°Salt & pepper to taste
* Methods
In saucepan, heat oil on medium heat.
Browning onion with diced ham about 1 to 2 min .
Pour in broth & bring to boil.
Add the orzo, Provence herbs and peas.
Add the white beans and season.
Extend cooking for 5 minutes.
