POTATO-SOUP-RECIPE




This recipe is to 1993 Calendar. This is Potato Soup recipe.

°2 tbsp-butter
°1 chopped onion
°2 garlic cloves, chopped
°4 potatoes, peel & diced
°2 cups () chicken broth
°1/4 tsp dried thyme
°2 cup milk
°Salt & pepper to taste
 °1 C grated  Cheddar cheese
°2 tbsp  chop fresh parsley

* PREPERATION :

 Melt the butter in a large saucepan. Sautéeonion & garlic for 3 to 4 min without color. Add the potatoes, chicken broth, thyme and pepper. Bring to a boil. Reduce the heat. Cook, covered, 20 minutes, or until potatoes are tender.
Puree half the soup. Pour into the saucepan. Add the milk. Heat well. Season to taste with salt also pepper. Stir in cheese. Cooking , only enough about cheese to melt.
Serving garnish with parsley.
