Cowboy Caviar ~ Whether you call it Texas Caviar, Black Bean Sauce, Black-Eyed Pea Salad, or Southwestern Bean Sauce, this American cross between sauce and salad is just GOOD! 1 15-ounce can black beans, rinsed well and drained
1 15-oz can black-eyed peas, rinse well and drain

1/3 c finely orange bell pepper

1/4 cup chopped black olives or kalamata
a L handful of chop fresh cilantro leaves

1 tsp chipotle chili powder
1/2 tsp ground cumin
salt & pepper to taste

Place all the salad ingredients in a large bowl.
Whisking dressing ingredients and trying to adjust to your like.
Adding dressing to salad also toss gently.
Salad is great prepared a few h in advance to permit the flavors to develop & blend. It is store for week in an airtight container in refrigerator.
