Breakfast casserole



*Ingredients :

°1 red pepper,
°1 yellow pepper
°2 onions cut into thin slices
°2 cloves minced garlic
°1/3 cup (75 ml) olive oil
°8 Italian sausages, light or spicy
°30 ml (2 tablespoons) olive oil
°2 zucchini cut into cubes
°2 Italian tomatoe,
°375 ml (1 ½ cup) shredded cheddar cheese or Parmigiano-Reggiano
°A slice of country bread or baguette bread
°Salt and Pepper

* Preparation :

Place the grill in the middle of the oven. Heat the oven to 200°C (400°F).
In  13 * 9 inch (33 x 23) baking plate, blend pepper, onion, & garlic with 60 ml (½ cup) of oil. Salt & Pepper. Baking about 40 min 
Meanwhile, in a large skillet, brown sausages in remaining oil. Reserve on a plate.
In the same skillet, fry the zucchini. Add tomatoes and cook for about 3 minutes or until softened.
Place the sausage and zucchini mixture in a baking dish over the cooked pepper mixture. Cover with cheese and continue to cook in the oven for 15 minutes. Serve it with bread.
