Old Fashioned Salmon Patties




Do you have trouble putting fish on children's plates? They will take great pleasure in dipping these salmon and potato croquettes in a good lemon sauce!

* Ingredients :

° 4 medium potatoes, peeled and cubed
° 450 g (1 lb) salmon fillets
° salt and pepper to taste
° 30 ml (2 tbsp.Chop parsley
° 30 ml chop chives
° 2 green-onions,chop
° 80 ml (1/3 cup) plain breadcrumbs
° 30 ml (2 tbsp.) Olive oil
+For the lemon sauce:
° 45 ml (3 tbsp.) Butter
° 1/4 cup (60 ml) chopped dry shallots
° 30 ml (2 tbsp.) Flour
° 310 ml (1 1/4 cups) milk
° 15 ml (1 tbsp.) Lemon zest
° 60 ml  chop parsley
° 80 ml (1/3 cup) 15% cooking cream

* Preperation :

Prepare the mash. Putting potatoes in-saucepan & covering with cold salt-water. Bring to a boil and cook, 18 to 20 minutes, until tender. Drain and mash. Let cool.

Cook the salmon. Preheat oven 205 ° C (400 ° F). Placing salmon fillet on  baking sheet lined with parchment paper. Salt & pepper. Baking about 15 to 20 min . Let cool, then crumble the salmon.

Shape and cook the croquettes. In a bowl, combine the mash with the salmon, herbs, green onions and breadcrumbs. Season. Shape into 8 patties, 2 cm (3/4 inch) thick, using about 125 mL (1/2 cup) of the mixture for each. Cooking patties about 3 to 4 min per side. Place on a sheet of absorbent paper. Let cool.

Prepare the sauce. In saucepan, melting butter on medium heat. Cooking shallots about 1 to 2 min, & sprinkling with flour. Pour in milk & bring to boil when whisk. Removing to fire. Stir in the zest, parsley and cream. Season.

Freeze. Permit sauce cool, & chill in refrigerator. Cool the patties in the refrigerator. Wrapping every patty in plastic wrap, & place in freezer bags. Removing air & seal. Pour sauce to an airtight-container. The patties and gravy can be frozen for up to 2 months.
Thaw. The day before, let the sauce thaw in the refrigerator. Do not thaw the patties.

Warm up. Place frozen croquettes on a baking sheet lined with parchment paper. Reheat for 18 to 20 minutes in a preheated oven to 205 ° C (400 ° F). Meanwhile, reheat the sauce in a saucepan over low-medium heat until just simmering.
