Lemon cake with lemon filling and lemon butter frosting



Lemon is my favorite citrus fruit for making desserts, and this time I present to you a super soft cake filled with lemon.

Yes, I read that I stuffed my lemon curd cake and didn't cut the cake in half for it.

Ingredients :

°2 eggs
°150g fine sugar
°100gm soft butter
°100gm ground almonds
°100gm flour with baking powder
°A little bit of vanilla flavour
To prepare lemon curd
°°2 lemons
°2 eggs
°75g fine sugar
°40 grams butter
°1 tablespoon of cornstarch
°lemon curd

Grate the peel of 2 lemons over a saucepan.
Squeeze the same lemon juice and pour it into the saucepan.
We add 2 eggs, as well as sugar and beat.
Add cornstarch and mix.
Heat your preparation over medium heat without ceasing to whisk; After a few minutes your preparation will be creamy. Stop cooking.
Cut the butter into 3 pieces and gradually add it, whisking vigorously.
Lemon curd is ready.
Cake preparation
Beat eggs with sugar, whisking everything well.
Add the vanilla flavor and butter and mix.
Add almond powder and mix.
Pour in the flour and mix to get a very smooth preparation.
Prepare the mold and grease it with butter.
Pour half of the cake mixture and spread it evenly with a spatula.
Gently pour in the lemon curd and distribute it evenly.
Pour the rest of the cake mixture over the lemon curd and brush it gently so that the pasta does not get mixed up.
Bake for 30 minutes at 180 ° C.
Let it cool slightly before slicing.
Sprinkle the extra soft lemon cake with icing sugar before tasting it.
